Fudgy Peanut Butter Cup Brownies

Just a quick note before I get to the recipe today. I love reading your comments, and I truly appreciate you taking the time to leave them! I like to respond personally to every comment via email. So, I have been blogging here for just a few weeks and I am already bringing you anther brownie recipe. And, yep, you guessed it, they're fudgy!  Can you tell I have a soft spot for these things? Even as a kid I would request brownies instead of birthday cake. They are my favorite :)
These are so easy to make it's almost embarrassing. And *bonus* they are out of this world delicious!






How could they not be? They are chock full of peanut butter cups. I know chocolate and peanut butter is not a new idea, but I thought I'd better post this in case you haven't tried this variation.  Your welcome.


Fudgy Peanut Butter Cup Brownies
by: Back For Seconds
  • 1 cup butter
  • 2 1/2 cups sugar
  • 4 eggs
  • 1 cup cocoa
  • 1 1/2 cups flour
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • 1 1/2 cups chopped peanut butter cups

Preheat oven to 350*
In a large glass bowl melt the butter and mix in cocoa powder until smooth. Stir in sugar, vanilla and salt. Mix in the flour until the batter is smooth then stir in half of the chocolate chips and 1 cup of the peanut butter cups. Spread into a well greased 9x13" pan. Sprinkle remaining chips and peanut butter cups on top. Bake 20-25 minutes being careful not to over bake. Store in a tightly covered container.
