I'm not big on eating huge meals. I am more of a snacker.
Sometimes we eat this spinach and artichoke dip for dinner. Actually, I think every time I make this we have it for dinner. It covers all your basic food groups, and if you dip celery or other veggies it's actually really healthy. (This is a great way to get some green veggies into your kiddos too - they will love this!)
Usually we eat it with chips though...shhhh :)
This would also be terrific for a party. Everyone loves a good dip, right?
So grab your favorite dippers and get cookin!
Awesome Spinach and Artichoke Dip
by Back For Seconds
- 4 cloves garlic chopped
- 1 medium onion chopped
- 10 cooked and drained spinach
- 1 jar artichokes roughly chopped
- 1/4 cup mayonnaise
- 1/2 cup sour cream
- 6 oz cream cheese
- 3/4 cup mozzarella cheese
- salt to taste
- 1/4 cup parmesan cheese
Preheat oven to 375*
Saute garlic and onions until soft. Pulse in a food processor. Add spinach, mayo, sour cream, cream cheese and salt and blend together well. Stir in mozzarella and artichokes and spoon into a greased 8" dish. Bake for 20 minutes. Sprinkle with parmesan. Serve hot.
