Coconut Carrot Mini Cakes

Carrot cake. You either love it or hate it, right?
I happen to love it but only if it doesn't have nuts. Or raisins. Nothing against nut and raisins - I like them, just not in my cake.
Actually, if I'm gonna be honest, the main reason I like carrot cake is it's marvelous ability to be the base for massive amounts of cream cheese frosting. Can I get an "Amen"??
However, I recently discovered that it can be amazingly delicious without all that frosting! (I still made a cream cheese glaze though - I'm not an animal!)  With the addition of coconut and a healthy dose of chocolate chips, this carrot cake rocks! Even if you think you don't like carrot cake, I bet this recipe could change your mind. It is moist, fluffy, and full of goodness!

Peanut Butter S'mores Cups

Can you tell I have a fondness for peanut butter? It always seems to creep into my baking experiments. Is there an ingredient or flavor that you just can't stay away from?
These s'mores cups were so easy and so tasty, and way less messy than the traditional s'mores.

Buffalo Chicken Cups

My husband, like most men,  is a big fan of buffalo chicken wings.
Funny thing is I don't actually like buffalo chicken wings, I just like dishes made with buffalo style chicken. Weird, I know.
But this fun dish I created was a big hit with both of us. It had the buffalo chicken flavor, but was nicely complimented by the ranch, veggies, and crescent cups.
Plus they easy to make and they look pretty cute. Bonus!   ;)

Fudgy Peanut Butter Cup Brownies

So, I have been blogging here for just a few weeks and I am already bringing you anther brownie recipe. And, yep, you guessed it, they're fudgy!  Can you tell I have a soft spot for these things? Even as a kid I would request brownies instead of birthday cake. They are my favorite :)
These are so easy to make it's almost embarrassing. And *bonus* they are out of this world delicious!

Deep Dish Gooey Cookie Pie

Let's talk cookies.
Everyone has a favorite kind of cookie, right? I mean who doesn't love a good cookie?
But I feel like people don't give them enough credit. They're not fancy enough. Not good enough to be the dessert at your dinner party. Kids stuff, you might say.
Well, I say they're delicious, and there's no reason a yummy cookie can't be the star of your next gathering. Just call it Deep Dish Gooey Cookie Pie, bake it in a deep skillet, and I assure you no one will turn up their nose at having "just a cookie" for dessert.

Awesome Spinach Artichoke Dip

I'm not big on eating huge meals. I am more of a snacker.
Sometimes we eat this spinach and artichoke dip for dinner. Actually, I think every time I make this we have it for dinner. It covers all your basic food groups, and if you dip celery or other veggies it's actually really healthy.  (This is a great way to get some green veggies into your kiddos too - they will love this!)
Usually we eat it with chips though...shhhh :)
This would also be terrific for a party. Everyone loves a good dip, right?
So grab your favorite dippers and get cookin!

Banana Fudge Brownie Pie

I love brownies but they have to be fudgy brownies. I mean, if I wanted a cakey brownie I would have just had cake. Also, I don't like nuts in my brownies. I like nuts, just not in my brownies.
These brownies are rich, very chocolaty, fudgy, and without nuts.  That makes these an A+ in my book.
