Peanut Butter S'mores Cups

Can you tell I have a fondness for peanut butter? It always seems to creep into my baking experiments. Is there an ingredient or flavor that you just can't stay away from?
These s'mores cups were so easy and so tasty, and way less messy than the traditional s'mores.
I think you should try them ;)






Peanut Butter S'mores Cups
By: Back For Seconds

  • 1 1/3 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup butter (softened)
  • 1 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1tsp vanilla
  • 1 egg
  • mini marshmallows
Preheat oven to 350*
In large bowl cream together the butter, peanut butter, and sugars. Add in the vanilla and egg. Gradually mix in the flour, baking soda and salt. When well blended scoop batter into lightly greased mini muffin tins. Bake about 7 minutes. Remove from oven and press 3 mini marshmallows into each cup and put back in the oven for 1 minute. Remove from pan and let cool on wire racks.

Frosting
  • 4 squares unsweetened chocolate
  • 1/4 cup soft butter
  • 3 1/2 cups powdered sugar
  • 1 tsp vanilla
  • 1/3 cup milk
Melt the chocolate and let cool slightly. Beat together with butter, powdered sugar and vanilla. Add the milk a little at a time until desired consistency.  Pipe onto cooled cups.
